  • 1/3 cup Extra Virgin Olive Oil
  • 1/4 cup Fresh Lime Juice about 2 limes
  • 1 tablespoon Honey
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation Steps
  1. Char the corn in a skillet over medium-high heat for about 5 to 6 minutes, then let cool.
  2. In a bowl, whisk olive oil, lime juice, honey, cumin, and chili powder; season with salt and pepper, and let sit for 15 minutes.
  3. In a large bowl, combine romaine, bell pepper, onion, and black beans; toss gently.
