- Preheat your oven to 400°F (200°C). Pat the chicken thighs dry and season with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Sear chicken thighs skin-side down for 6-8 minutes.
- Mix Parmesan, Italian seasoning, paprika, and minced garlic in a bowl for the coating mixture.
- Flip chicken and sear the other side for 2-3 minutes. Remove from skillet.
- Melt remaining butter in the skillet and sauté garlic for about 60 seconds.
- Return chicken to the skillet skin-side up. Coat with garlic-butter and sprinkle Parmesan mixture on top.
- Transfer skillet to oven and bake for 15-18 minutes until chicken reaches 165°F (74°C).
- Let the chicken rest for 5 minutes and garnish with parsley before serving.
