  • 4 pieces bone-in, skin-on chicken thighs
For the Garlic-Parmesan Coating
  • 2 tablespoons unsalted butter or use olive oil for a dairy-free alternative
  • 2 tablespoons olive oil or avocado oil
  • 4 cloves garlic minced; fresh is best
  • 1 cup freshly grated Parmesan cheese freshly grated melts beautifully
  • 1 teaspoon Italian seasoning can substitute with dried oregano or basil
  • 1 teaspoon paprika for added color and mild flavor
  • 1/4 teaspoon red pepper flakes optional for a spicy kick
  • to taste kosher salt
  • to taste freshly ground black pepper
For Searing and Serving
  • 1/4 cup chopped fresh parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry and season with salt and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken thighs skin-side down for 6-8 minutes.
  3. Mix Parmesan, Italian seasoning, paprika, and minced garlic in a bowl for the coating mixture.
  4. Flip chicken and sear the other side for 2-3 minutes. Remove from skillet.
  5. Melt remaining butter in the skillet and sauté garlic for about 60 seconds.
  6. Return chicken to the skillet skin-side up. Coat with garlic-butter and sprinkle Parmesan mixture on top.
  7. Transfer skillet to oven and bake for 15-18 minutes until chicken reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes and garnish with parsley before serving.
