- In a bowl, combine shrimp with salt, black pepper, sweet paprika, and garlic powder. Toss to coat and set aside.
- Mince garlic and dice onion.
- In a skillet, heat olive oil and butter over high heat. Sear shrimp for 1 minute on each side until pink. Remove from skillet.
- Add minced garlic and diced onion to skillet, sauté for 3 minutes.
- Pour in ¾ coconut milk, stir, and add cornstarch mixture. Thicken the sauce.
- Stir in fish sauce, honey, and lime juice, simmer gently.
- Return shrimp to skillet and stir to coat. Add cilantro if using.
- Adjust seasoning and serve, garnishing with black pepper and chili flakes.
