Method
 

Directions
  1. Preheat your grill to high heat, around 450°F, and brush the grates with olive oil.
  2. Pat the chicken breasts dry, drizzle with olive oil, and rub in taco seasoning.
  3. Combine chopped red bell pepper, broccolini, and red onion in a bowl, drizzle with olive oil and taco seasoning.
  4. Grill the chicken for 3-4 minutes per side, add vegetables after flipping.
  5. Blend mayonnaise, sour cream, jalapeño, lime juice, and onion powder until smooth for the ranch sauce.
  6. Slice the grilled chicken and chop the vegetables into bite-sized pieces.
  7. Layer cheese, sliced chicken, vegetables, and cilantro on half of a tortilla, fold over.
  8. Grill assembled quesadilla for 3-5 minutes per side until golden and crispy.
  9. Let cool, cut into quarters, and serve with jalapeño ranch sauce.
