Method
 

Step-by-Step Instructions
  1. Preheat a large skillet or grill pan over medium heat for about 5 minutes.
  2. In a mixing bowl, combine sliced zucchini, diced red bell pepper, and thinly sliced red onion. Drizzle with olive oil, and season with salt, pepper, and dried oregano. Toss to coat evenly, then sauté for 3-4 minutes until slightly softened.
  3. Place one tortilla in the skillet and sprinkle half of the shredded mozzarella cheese over it. Layer the sautéed vegetable mix, sun-dried tomatoes, kalamata olives, crumbled feta cheese, and any optional greens.
  4. Top with the remaining mozzarella cheese and place a second tortilla over the top. Press down slightly.
  5. Cook for about 2-3 minutes on one side until golden brown, then flip and repeat on the other side for another 2-3 minutes.
  6. Remove from skillet, allow to cool slightly, and slice into wedges for serving.
