Ingredients
  

For the Vegetables
  • 1 medium Zucchini Can substitute with eggplant.
  • 1 medium Red Bell Pepper Can substitute with yellow or green bell peppers.
  • 1 medium Yellow Bell Pepper Any colored bell pepper can be used.
  • 1 medium Red Onion Yellow onion can be used as a milder alternative.
  • 1 cup Cherry Tomatoes Grape tomatoes can be used as a substitute.
For the Wrap
  • 2 large Whole Wheat Wraps Gluten-free tortillas can be used as an alternative.
  • 1/2 cup Hummus Substitute with avocado spread or tzatziki.
  • 2 handful Fresh Spinach or Arugula Other greens like kale or Swiss chard can be used.
For the Zesty Herb Sauce
  • 1 cup Greek Yogurt Substitute with dairy-free yogurt for a vegan option.
  • 2 tablespoons Lemon Juice Lime juice works in a pinch.
  • 1 teaspoon Lemon Zest Can omit if unavailable.
  • 2 tablespoons Fresh Dill Substitute with dried herbs if fresh is not available.
  • 2 tablespoons Fresh Parsley Substitute with dried herbs if fresh is not available.
  • 2 cloves Garlic Use garlic powder if fresh is unavailable.
For Seasoning
  • 2 tablespoons Olive Oil Can replace with avocado oil.
  • to taste Salt and Pepper Use garlic powder or onion powder as additional flavor boosts.

Method
 

Preparation Steps
  1. Preheat your grill or grill pan to medium-high heat, around 400°F (200°C). Allow it to heat for about 10 minutes.
  2. In a large bowl, combine sliced zucchini, red and yellow bell peppers, red onion, and halved cherry tomatoes. Drizzle with olive oil and season generously with salt and pepper. Toss until coated.
  3. Place the seasoned vegetables onto the preheated grill and cook for 5-7 minutes, turning occasionally until they are tender and caramelized.
  4. In a mixing bowl, combine Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper to make the Zesty Herb Sauce. Stir until well combined.
  5. Lay a whole wheat wrap flat, spread 1/4 cup of hummus in the center, leaving space around the edges.
  6. Layer the grilled veggies and a handful of spinach or arugula over the hummus.
  7. Drizzle 2-3 tablespoons of Zesty Herb Sauce over the fill ingredients.
  8. Roll the wrap tightly from the bottom and slice in half diagonally for serving.
