Preparation Steps
- Preheat your grill or grill pan to medium-high heat, around 400°F (200°C). Allow it to heat for about 10 minutes.
- In a large bowl, combine sliced zucchini, red and yellow bell peppers, red onion, and halved cherry tomatoes. Drizzle with olive oil and season generously with salt and pepper. Toss until coated.
- Place the seasoned vegetables onto the preheated grill and cook for 5-7 minutes, turning occasionally until they are tender and caramelized.
- In a mixing bowl, combine Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper to make the Zesty Herb Sauce. Stir until well combined.
- Lay a whole wheat wrap flat, spread 1/4 cup of hummus in the center, leaving space around the edges.
- Layer the grilled veggies and a handful of spinach or arugula over the hummus.
- Drizzle 2-3 tablespoons of Zesty Herb Sauce over the fill ingredients.
- Roll the wrap tightly from the bottom and slice in half diagonally for serving.
