Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey, season with salt, pepper, paprika, and thyme. Cook for 5–7 minutes until browned.
  3. Add diced onion and bell pepper to the skillet. Sauté for another 5 minutes until softened.
  4. Stir in fresh spinach or kale and wilt for 2–3 minutes. Remove from heat.
  5. Combine turkey-vegetable mixture with cubed sweet potatoes in a mixing bowl.
  6. Grease a 9x13-inch baking dish with olive oil and pour the mixture in, spreading evenly.
  7. Sprinkle shredded cheddar and mozzarella cheese over the top.
  8. Bake for 25–30 minutes until cheese is bubbly and golden brown.
  9. Let the casserole rest for 5 minutes before slicing and serving.
