Method
 

Step-by-Step Instructions
  1. Sift powdered sugar into a bowl.
  2. Whisk together flour and salt in a separate bowl.
  3. Cream together butter and sugar until light and fluffy.
  4. Add vanilla extract and mix well.
  5. Stir in dry flour and salt mixture until just combined.
  6. Roll out the dough to about 1/2 cm thickness.
  7. Refrigerate cut cookies for about 30 minutes.
  8. Preheat your oven to 335°F (170°C).
  9. Bake cookies for 10-12 minutes until edges are pale.
  10. Combine glaze ingredients and mix until smooth.
  11. Dip half of the cookies in glaze and spread jam on the others.
  12. Sandwich glazed cookies with jam-filled ones.
  13. Let the cookies set for 15-20 minutes.
