Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground turkey and cook for about 3-4 minutes, then break it apart and cook until no longer pink, around another 2-3 minutes.
  3. Stir in frozen onions and peppers, drained black beans, and taco seasoning. Cook for an additional 3-4 minutes.
  4. Turn off the heat, scoop half of the turkey mixture into a bowl. Layer 3 corn tortillas over the remaining mixture, drizzle with half the enchilada sauce.
  5. Spread the rest of the turkey mixture over the tortillas, add 3 more tortillas on top, and the remaining enchilada sauce.
  6. Sprinkle shredded Mexican cheese over the top of the casserole.
  7. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbling and golden brown.
  8. Let cool for a few minutes, garnish with your favorite toppings, slice, and serve.
