Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and sauté bell peppers and spinach for 5-7 minutes until softened.
  3. In a medium bowl, combine ricotta cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth.
  4. Layer the baking dish: spread a layer of ricotta mixture, then add zucchini or noodles, half of vegetables, dollops of ricotta, and mozzarella cheese. Repeat layers, finishing with mozzarella on top.
  5. Sprinkle Parmesan cheese over the top, and add a dash of Italian seasoning for extra flavor.
  6. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until top is golden brown.
  7. Let the lasagna rest for 10 minutes before slicing and serving.
