Ingredients
  

For the Chicken
  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
For the Honey Chipotle Sauce
  • 1/2 cup honey
  • 2 tablespoons chipotle peppers in adobo finely chopped
  • 1/2 cup ketchup
For the Sliders
  • 12 pieces brioche slider buns toasted

  • 2 cups green cabbage shredded
  • 1 cup purple cabbage shredded
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
For the Creamy Garlic Sauce
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons milk any variety
  • 2 cloves garlic minced

Method
 

Coleslaw Preparation
  1. In a medium bowl, whisk together mayonnaise, apple cider vinegar, and sugar until smooth. Add shredded green cabbage, purple cabbage, and carrots, tossing until coated. Chill in the fridge for at least 20 minutes.
Creamy Garlic Sauce Preparation
  1. In a small bowl, combine mayonnaise, sour cream, milk, and minced garlic. Whisk until creamy and well blended; season with salt and pepper to taste.
Honey Chipotle Sauce Preparation
  1. In a saucepan over medium heat, combine honey, finely chopped chipotle peppers, and ketchup. Stir continuously and simmer for 3-5 minutes until thickened.
Grilling the Chicken
  1. Pound the chicken thighs to an even thickness. Rub olive oil, kosher salt, and black pepper over the thighs. Grill on medium-high heat for 5-7 minutes per side until golden brown and 165°F internally.
Coating the Chicken
  1. Remove grilled chicken from heat and toss in the warm honey chipotle sauce until coated.
Toasting the Buns
  1. Heat a skillet and butter each brioche slider bun. Toast cut side down until golden brown, about 1-2 minutes.
Assembling the Sliders
  1. Assemble sliders by placing glazed chicken on each toasted bun, topping with coleslaw and creamy garlic sauce before closing with the top bun. Serve immediately.
