Method
 

Preparation Steps
  1. Preheat your oven to 325°F (163°C) and prepare your springform pan by greasing it lightly.
  2. In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and brown sugar until mixed. Press into the bottom of the pan and bake for 10 minutes.
  3. Melt unsalted butter in a medium saucepan over medium heat until golden brown and aromatic, about 5-7 minutes.
  4. In a large mixing bowl, beat cream cheese and granulated sugar until smooth, about 2-3 minutes. Mix in vanilla bean paste.
  5. Incorporate eggs one at a time, mixing gently until just combined.
  6. Fold in sour cream and cooled brown butter until well incorporated.
  7. Pour the filling over the cooled crust and smooth the top.
  8. Bake for 55-65 minutes until edges are set and center is slightly jiggly. Turn off the oven and let it cool inside for an hour.
  9. Cool at room temperature for 30 minutes, then refrigerate for at least 4 hours or overnight.
  10. Remove from pan, slice, and serve with optional garnishes.
