  • 1 tablespoon cinnamon-sugar mixture Adjust to taste or include nutmeg for a spicy twist.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9 baking pan.
  2. Beat the 4 large eggs until pale and fluffy, then mix in the sugars, vegetable oil, and vanilla extract until smooth.
  3. Gradually add the matzo cake meal into the wet mixture, stirring until a thick batter forms.
  4. Wash and slice the apples into thin wedges, then toss with half of the cinnamon-sugar mixture.
  5. Spread half of the batter into the prepared pan, then layer half of the apples on top; repeat with the remaining batter and apples.
  6. Sprinkle the remaining cinnamon-sugar mixture over the top layer of apples.
  7. Bake in the preheated oven for approximately 90 minutes until golden brown and firm.
  8. Allow the cake to cool in the pan for about 20 minutes before slicing and serving warm.
