- Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9 baking pan.
- Beat the 4 large eggs until pale and fluffy, then mix in the sugars, vegetable oil, and vanilla extract until smooth.
- Gradually add the matzo cake meal into the wet mixture, stirring until a thick batter forms.
- Wash and slice the apples into thin wedges, then toss with half of the cinnamon-sugar mixture.
- Spread half of the batter into the prepared pan, then layer half of the apples on top; repeat with the remaining batter and apples.
- Sprinkle the remaining cinnamon-sugar mixture over the top layer of apples.
- Bake in the preheated oven for approximately 90 minutes until golden brown and firm.
- Allow the cake to cool in the pan for about 20 minutes before slicing and serving warm.
