  • 1 tsp Rice vinegar Apple cider vinegar serves as a good substitute.

Preparation
  1. Start by cutting your boneless skinless chicken breasts or thighs into bite-sized cubes. In a large bowl, combine the chicken with soy sauce, sesame oil, grated ginger, and minced garlic. Toss everything until the chicken is evenly coated. Allow the mixture to marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
  2. Whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey in a medium bowl for the Bang Bang sauce. Stir until smooth and well combined, adjusting sriracha to match your spice preference.
  3. If using wooden skewers, soak them in water for about 30 minutes. Alternate threading marinated chicken pieces and pineapple chunks onto the skewers.
  4. Preheat your grill to medium-high heat. Cook skewers for about 3-5 minutes on each side until golden brown and fully cooked through, reaching an internal temperature of 165°F.
  5. Toss the cooked skewers in the prepared Bang Bang sauce for added flavor or drizzle the sauce on top. Garnish with chopped green onions and sesame seeds before serving.
