Step‑by‑Step Instructions
  1. In a large mixing bowl, combine warm milk with granulated sugar. Sprinkle active dry yeast on top and let sit for 5-10 minutes until frothy.
  2. Add melted unsalted butter, eggs, and vanilla extract to the mixture. Gradually incorporate flour, salt, and ground cinnamon until a soft dough forms. Knead for 8-10 minutes until smooth.
  3. Transfer the dough to a greased bowl, cover, and let rise in a warm place for about 1 hour until doubled.
  4. Mix together brown sugar, ground cinnamon, nutmeg, and ginger in a bowl. Grate fresh carrots.
  5. Roll the dough into a rectangle, spread softened butter, then sprinkle the sugar-spice mixture and grated carrots. Optionally add chopped nuts, roll tightly, and cut into 12 slices.
  6. Arrange the sliced rolls in a greased baking dish, cover, and let rise for 30-40 minutes until puffy.
  7. Preheat your oven to 350°F. Bake for 25-30 minutes until golden brown.
  8. Beat together cream cheese, unsalted butter, powdered sugar, and vanilla extract for frosting. Adjust with milk if needed.
