Step-by-Step Instructions for Chicken Shawarma with Garlic Sauce
  1. In a large mixing bowl, combine olive oil with cumin, paprika, turmeric, coriander, and cinnamon. Add minced garlic, lemon juice, and a pinch of salt and pepper. Stir to create a vibrant marinade.
  2. Cut chicken thighs into strips. Coat chicken in marinade, cover, and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat the grill or non-stick skillet over medium-high heat for 5 minutes. Add olive oil to prevent sticking.
  4. Add marinated chicken strips to the grill or pan in a single layer. Cook for 5–7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
  5. In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, and a pinch of salt for the garlic sauce.
  6. Slice the cooked chicken into bite-sized pieces. Serve in pita or on a plate with garlic sauce and fresh vegetables.
