- Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
- Using a stand mixer, cream together the softened butter and granulated sugar on medium speed until light and fluffy.
- Add in the egg, vanilla extract, strawberry jam, and crushed freeze-dried strawberries, beating until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Scoop about 1½ tablespoons of the dough and roll into smooth balls, placing them on the baking sheets.
- Bake the cookies for 10–12 minutes, until the edges are set but the centers are slightly soft.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second increments, stirring until smooth.
