  • 1/2 cup Brown Sugar light or dark
  • 1 large Egg or flax egg for vegan

For the Sweet Additions
  • 1 cup Semi-Sweet Chocolate Chips or dark/vegan chocolate
  • 1 cup Mini Marshmallows or chopped larger marshmallows
  • 1/2 cup Marshmallow Fluff optional

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing at low speed until combined.
  6. Fold in the chocolate chips, mini marshmallows, and optional marshmallow fluff until evenly mixed.
  7. Scoop portions of dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes until edges are set and centers are slightly soft.
  9. Let the cookies cool on the baking sheets for about 5 minutes before transferring to a wire rack.
