  • 1 batch Chocolate Cake Use store-bought or homemade.
For the Strawberry Mousse
  • 1/2 cup Freeze-Dried Strawberries Ground into a fine powder.
  • 1 cup Heavy Cream Whipped until stiff peaks form.
  • 1/4 cup Powdered Sugar Adjust sweetness to taste.
  • 1 teaspoon LorAnn Oils Strawberry Emulsion Optional, or swap with vanilla.
For the Strawberry Compote
  • 2 cups Fresh Strawberries Hulled and sliced.
  • 1/4 cup Sugar Adjust based on berry sweetness.
  • 1/4 cup Water
  • 1 tablespoon Lemon Juice For acidity.
For Garnish and Decoration
  • 1/2 cup Semi-Sweet Chocolate Chips For melting and dipping strawberries.

Method
 

Preparation Steps
  1. Grind freeze-dried strawberries into a fine powder in a food processor.
  2. In a mixing bowl, pour in heavy cream and sift in powdered sugar, whip until stiff peaks form.
  3. Gently fold in strawberry powder and optional LorAnn emulsion, then chill the mousse.
  4. In a saucepan, combine sliced fresh strawberries, sugar, water, and lemon juice, cook over medium heat until thickened.
  5. Transfer the compote to cool for 30 minutes, then chill completely.
  6. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, dip fresh strawberries into melted chocolate.
  7. Assemble the parfaits with layers of chocolate cake, mousse, and compote, finishing with a dollop of mousse.
  8. Garnish with chocolate-covered strawberries and chill until serving.
