Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Line a 10 x 15 baking sheet with aluminum foil, spraying it lightly with non-stick spray.
  3. In a small bowl, mix 1/4 cup of sugar with 1 teaspoon of cinnamon.
  4. Arrange 40 saltine crackers in a single layer on the baking sheet.
  5. Combine 1 cup of salted butter and 1 cup of brown sugar in a saucepan over medium heat. Stir continuously until boiling.
  6. Pour the hot toffee mixture over the arranged saltines, spreading it evenly.
  7. Bake for about 5 minutes, observing until toffee is bubbly and lightly browned.
  8. Let it sit for about a minute after removing from the oven, leveling overlapping crackers.
  9. Sprinkle 2 cups of Ghirardelli white chocolate chips over the hot toffee.
  10. Spread the melted chocolate evenly across the toffee.
  11. Generously sprinkle the cinnamon-sugar mixture over the melted chocolate.
  12. Allow the toffee to cool slightly until set, then cut or break into pieces for serving.
