- Combine warm water and sugar in a bowl, sprinkle yeast on top and let sit for 10-15 minutes until frothy.
- In a large bowl, whisk flour and salt, create a well, pour in yeast mixture and olive oil. Stir until a sticky dough forms.
- Cover the dough with plastic wrap and refrigerate for at least 12 hours.
- Grease a baking pan with butter, deflate the dough, and transfer it to the pan. Cover and let rise for 1.5 to 2 hours.
- Melt butter in a saucepan until golden brown, about 5-7 minutes, then cool slightly.
- In a bowl, combine brown sugar and cinnamon with the brown butter until dissolved.
- Preheat oven to 450°F. Dimple the risen dough and drizzle the cinnamon-butter mixture over the top.
- Bake the focaccia for 20-25 minutes until golden brown.
- Cool in the pan for 5-10 minutes, then mix icing ingredients and drizzle over the warm focaccia.
