  • 1 tablespoon Butter For frying tortillas

Step-by-Step Instructions for Fried Egg Quesadilla
  1. Heat a non-stick skillet over medium heat and melt a small pat of butter.
  2. Crack two large eggs into the skillet, season with salt and pepper, and cook for 3-4 minutes until whites are set.
  3. In the same skillet, place a flour tortilla and sprinkle half of the shredded cheese on top. Cook for 1-2 minutes.
  4. Layer the fried eggs on top of the melted cheese, add avocado slices, and sprinkle the remaining cheese.
  5. Top with a second tortilla, pressing down slightly. Cook for 2-3 minutes until golden brown.
  6. Flip the quesadilla and cook for another 2-3 minutes until both sides are crispy.
  7. Remove from skillet, let rest for a minute, then slice into wedges and serve immediately.
