Method
 

Preparation
  1. In a medium bowl, combine olive oil, lemon juice, garlic, oregano, salt, and black pepper. Add chicken breasts, ensuring they are coated. Marinate for at least 15 minutes.
  2. Heat a skillet over medium heat. Cook the marinated chicken for 5-7 minutes per side, until golden brown and cooked through. Let it rest for a few minutes.
  3. Warm the cooked rice in a saucepan or microwave until heated through. Fluff with a fork before serving.
  4. Slice the cooked chicken into strips or bite-sized pieces to serve.
  5. In serving bowls, place an even portion of the warmed rice as the base. Layer the sliced chicken on top, adding vegetables and olives.
  6. Drizzle tzatziki sauce over the assembled bowls.
  7. Garnish with chopped parsley and serve immediately.
