Ingredients

For the Casserole
  • 1 lb thin fresh asparagus Use thin asparagus to avoid pre-steaming; if using thicker stalks, steam for 2-3 minutes first.
  • 0.5 pound cooked ham (cubed) Use leftover ham for sustainability.
  • 0.5 loaf Italian or French bread (cubed, about 2 cups) Stale bread works best for maximum absorption.
  • 1 medium red pepper (diced small) Can substitute with bell peppers of different colors.
  • 2 cups 2% milk Whole milk can be used for richer flavor.
  • 8 large eggs Can substitute with egg alternatives for dietary needs.
  • 6 slices Swiss cheese Gruyere or cheddar can be substituted for different flavors.
  • 1 tsp salt Adjust salt to taste depending on the ham's saltiness.
  • 0.5 tsp pepper Black or white pepper can be used.
  • 3 medium green onions (diced) Chives are a great replacement.

Equipment

  • 8x11 casserole dish

Method

Step-by-Step Instructions
  1. Begin by placing your 8x11 casserole dish on the counter. Evenly distribute the cubed Italian or French bread across the bottom.
  2. Next, layer the cubed cooked ham, thin asparagus and diced red pepper on top of the bread.
  3. In a mixing bowl, whisk together 2 cups of milk, 8 eggs, 1 teaspoon salt, and 1/2 teaspoon pepper until well blended.
  4. Place 6 slices of Swiss cheese on top of the casserole, overlapping the slices.
  5. Cover the casserole dish tightly with foil and refrigerate for at least two hours, or preferably overnight.
  6. When you're ready to bake, preheat the oven to 375°F (190°C).
  7. Place the casserole in the preheated oven and bake for 40-50 minutes.
  8. Once baked, remove from the oven and garnish with diced green onions.
