  • 1 cup Milk any type like almond or oat works
  • 1/2 cup Oil can use melted butter
  • 3 large Eggs or flax eggs for vegan option
  • 1 packet Instant Hot Cocoa Packet homemade cocoa mix optional
  • 1 packet Instant Chocolate Pudding Mix can be omitted
For the Frosting
  • 1 cup Butter softened
  • 1 cup Marshmallow Fluff homemade is an alternative
  • 1 teaspoon Vanilla Extract preferably pure
  • 1 pinch Salt balances sweetness
  • 3 cups Powdered Sugar granulated sugar can be used in a pinch
  • 2 tablespoons Heavy Cream or milk for a lighter option
  • 1/2 cup Miniature Marshmallow Bits or regular mini marshmallows
  • 2 tablespoons Chocolate Syrup homemade chocolate sauce is fine

Method
 

Baking Steps
  1. Preheat your oven to 350°F (175°C) and line two muffin tins with 22 paper liners.
  2. In a large mixing bowl, combine chocolate fudge cake mix, milk, oil, eggs, hot cocoa packet, and pudding mix. Beat on medium speed for about 2 minutes until smooth.
  3. Fill each muffin cup about 3/4 full with the batter.
  4. Bake for 15-18 minutes, checking for doneness with a toothpick. Cool completely in the tins.
  5. In a separate bowl, beat together softened butter, marshmallow fluff, vanilla extract, and a pinch of salt.
  6. Gradually add powdered sugar and alternate with heavy cream, mixing until the frosting is light and fluffy.
  7. Frost each cooled cupcake generously using a spatula or piping bag.
  8. Sprinkle miniature marshmallow bits and drizzle with chocolate syrup for decoration.
