  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Feta Cheese omit for dairy-free
  • 2 tablespoons Olive Oil or avocado oil
  • 1 tablespoon Lemon Juice or lime juice

For Serving
  • 4 cups Fresh Greens for serving
  • 4 pieces Pita Pockets
  • 4 slices Whole-Grain Toast for serving

Method
 

Preparation Steps
  1. Cook the chicken until it reaches 165°F (75°C), about 15-20 minutes. Rest and shred it.
  2. Mix Greek yogurt, chopped cucumber, dill, crumbled feta, lemon juice, and olive oil in a bowl. Season with salt and pepper.
  3. Combine shredded chicken, halved cherry tomatoes, and any optional ingredients in a mixing bowl.
  4. Gently fold the tzatziki sauce into the chicken and vegetable mixture.
  5. Cover and chill for at least 30 minutes to let flavors meld.
  6. Serve over fresh greens or in pita pockets. Add extra dill for garnish.
