Method
 

Cooking Instructions
  1. Cook the noodles in boiling water for 2-3 minutes, drain and rinse with cold water, then set aside.
  2. Sauté shallots in canola oil for about 3 minutes until soft.
  3. Add red curry paste, tomato paste, garlic, and ginger; stir for 2 minutes.
  4. Pour in coconut milk and chicken stock, bring to a gentle boil, then simmer for 8-10 minutes.
  5. Cook ground pork with sesame oil, garlic, and chili for 5-7 minutes until browned.
  6. Stir in fish sauce and season pork; cook for another minute.
  7. Assemble by dividing noodles in bowls, ladling broth, and topping with pork, eggs, cilantro, onions, and sesame seeds.
