Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time to the mixture, mixing well after each addition, then add vanilla extract.
  5. Gradually add dry ingredients to the wet mixture, alternating with milk, until soft dough forms.
  6. Scoop dough into balls, flatten slightly, and place on prepared baking sheets about 2 inches apart.
  7. Bake for 12-15 minutes until bottoms are lightly golden. Let cool on sheets for 5 minutes.
  8. In a mixing bowl, beat cream cheese, powdered sugar, vanilla, and peach jam until smooth for the filling.
  9. Spread peach filling on the flat side of one cookie, and sandwich with another cookie.
  10. Optionally roll filled cookie edges in granulated sugar mixed with food coloring.
