Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Divide the mozzarella cheese into 8 equal portions, forming them into circular discs on the prepared baking sheet.
  3. Bake for 8-10 minutes until the edges are golden brown and centers are bubbly.
  4. Heat a skillet over medium heat, add bacon grease or olive oil, then sauté the spinach for 2-3 minutes until wilted.
  5. In a mixing bowl, combine cream cheese, crumbled bacon, sautéed spinach, minced garlic, sea salt, and black pepper, and mix until smooth.
  6. Cool the cheese discs for about 2 minutes until pliable.
  7. Place a spoonful of the filling in the center of each cheese disc, then roll it into a log shape with the seam on the bottom.
  8. Allow the roll ups to cool completely at room temperature for about 10-15 minutes before serving.
