Preparation Steps
  1. Slice the beef sirloin into thin strips against the grain. Dice the onion and bell peppers into bite-sized pieces.
  2. In a medium bowl, combine soy sauce, sesame oil, minced garlic, and sugar. Add the sliced beef and let sit for 15 minutes.
  3. Heat a large skillet over medium-high heat with a bit of vegetable oil. Add the diced onions and bell peppers; sauté until tender, about 5 minutes.
  4. Push the sautéed vegetables to one side and add the marinated beef to the skillet, cooking for about 5 minutes until browned.
  5. Incorporate the chopped kimchi into the skillet, stirring everything together, and cook for another 2 minutes.
  6. Spoon the beef and vegetable mixture into toasted hoagie rolls and top with cheese.
  7. Place the cheesesteaks on a baking sheet and broil for about 2 minutes until the cheese is melted.
