Ingredients
  

For the Shrimp
  • 1 pound Shrimp Thawed with tails removed
  • 1 tablespoon Olive Oil Can substitute with canola oil
  • 1 teaspoon Smoked Paprika Regular paprika can be used
  • 1 teaspoon Chili Flakes Adjust quantity to taste
For the Pasta
  • 5 ounces Pasta Use any pasta shape; gluten-free if needed
For the Flavor Base
  • 4 cloves Garlic Fresh minced recommended
  • 4 cups Spinach Can use kale or Swiss chard as alternative
  • 1 tablespoon Lemon Juice Fresh is best
  • 1 teaspoon Lemon Zest
For Garnish & Serving
  • 1/4 cup Fresh Basil/Parsley Or substitute with dried herbs
  • 1/4 cup Parmesan Optional for garnish

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve a cup of pasta water, drain, and keep pasta warm in the pot.
  2. In a medium bowl, mix thawed shrimp with olive oil, smoked paprika, chili flakes, salt, and pepper. Toss to coat.
  3. Heat a skillet over medium-high heat. Cook shrimp for 1-2 minutes each side until opaque. Remove from skillet and keep warm.
  4. In the same skillet, add another tablespoon of olive oil and sauté minced garlic for 2-3 minutes until fragrant.
  5. Add spinach to the skillet and cook for 1-2 minutes until wilted.
  6. Combine cooked pasta, shrimp, spinach, and reserved pasta water in the skillet. Squeeze lemon juice and add lemon zest. Mix well.
  7. Serve hot, garnished with fresh basil or parsley and optional Parmesan.
