Ingredients
  

For the Chicken Marinade
  • 350 g boneless chicken thighs very finely sliced; substitute chicken breast if preferred.
  • 1.5 tbsp fish sauce can substitute with all-purpose soy sauce.
  • 2 tbsp brown sugar honey can serve as an alternative.
  • 1 tbsp lime juice rice vinegar is a good substitute.
  • 1 clove garlic finely grated.
  • 1 tbsp canola oil any neutral oil can be utilized.
For the Rolls
  • 10 sheets rice paper sheets (~22cm/8.5"), found in regular grocery or Asian stores.
  • 70 g vermicelli noodles can swap with other thin noodles.
  • 1 cup green cabbage very finely sliced; cut into thin shreds for tenderness.
  • 1 cup red cabbage very finely sliced; cut into thin shreds for tenderness.
  • 1 unit carrot finely julienned; cucumber can be used as a substitute.
  • 0.25 cup coriander/cilantro roughly chopped; Thai basil is another option.
  • 0.75 cup mint leaves small leaves recommended; Vietnamese mint works well too.
For the Peanut Dipping Sauce
  • 1.5 tbsp natural peanut butter can replace with regular peanut butter spread.
  • 2 tbsp hoisin sauce
  • 1 tbsp white vinegar lime juice can be used instead.
  • 0.25-0.33 cup milk (or water) coconut milk can be a flavorful alternative.
  • 0.5 tsp chili paste optional; adjust to taste.

Method
 

Preparation Steps
  1. Marinate Chicken: In a mixing bowl, combine the sliced boneless chicken thighs with fish sauce, brown sugar, lime juice, grated garlic, and finely grated lemongrass. Stir well and let it sit for about 15 minutes.
  2. Prepare Noodles: Bring a pot of water to a boil and add the vermicelli noodles. Allow them to soak for 2 minutes, then drain and rinse with cold water.
  3. Make Peanut Sauce: In a small bowl, whisk together natural peanut butter, hoisin sauce, white vinegar, and milk until smooth. Adjust consistency as needed, and add chili paste for heat.
  4. Cook Chicken: Heat a non-stick pan over medium-high heat, add canola oil, and cook the marinated chicken until caramelized and cooked through, about 3 minutes.
  5. Soak Rice Paper: Fill a shallow bowl with warm water. Dip each rice paper sheet for 2 to 3 seconds until it is pliable.
  6. Assemble Rolls: On each rice paper sheet, layer a small amount of cooked chicken, vermicelli noodles, finely sliced cabbage, julienned carrots, chopped coriander, and mint leaves. Roll tightly as you go.
  7. Serve: Arrange the fresh rolls on a serving platter and cut them in half if desired. Serve alongside the peanut dipping sauce.
