Step-by-Step Instructions
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper. Add the chicken, cover, and marinate for at least 30 minutes.
  2. Prepare the tzatziki by mixing Greek yogurt, crumbled feta, grated cucumber, lemon juice, minced garlic, olive oil, dill or mint, salt, and pepper. Stir well and refrigerate for at least 1 hour.
  3. Preheat grill or oven to 400°F (200°C). Cook marinated chicken for about 6-7 minutes per side or bake for 20-25 minutes until cooked through. Let it rest before slicing.
  4. Warm the pita or flatbread in a skillet for 1-2 minutes on each side until pliable.
  5. Assemble gyros by layering sliced chicken, cherry tomatoes, red onion, and greens on the pita. Drizzle with tzatziki.
  6. Serve immediately, garnished with extra feta if desired. Enjoy with sides like Greek salad or Mediterranean rice.
