  • 1/4 cup Fresh Parsley finely chopped
  • 2 cloves Garlic minced
  • 1/2 cup Feta Cheese crumbled, or ricotta for milder taste
  • 1/3 cup Sun-Dried Tomatoes chopped
  • 1 tsp Dried Oregano or Italian seasoning
  • to taste Salt
  • to taste Black Pepper
  • 1 Egg
For Cooking
  • 1 tbsp Olive Oil or avocado oil
  • 2 tbsp Lemon Juice fresh

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, parsley, garlic, feta, sun-dried tomatoes, oregano, salt, and black pepper.
  3. Beat the egg and fold it into the mixture until just combined.
  4. Roll the mixture into balls about 1 inch in diameter.
  5. Heat olive oil in a skillet over medium-high heat and brown the meatballs for about 5 minutes.
  6. Transfer the browned meatballs to a parchment-lined baking sheet and bake for 10 to 12 minutes.
  7. Squeeze fresh lemon juice over the cooked meatballs before serving.
