Ingredients
  

For the Chicken
  • 1 pound Chicken breasts Skinless, boneless, cut into bite-sized chunks
  • 2 tablespoons Extra virgin olive oil Can substitute with any neutral oil
For the Vegetables
  • 1 medium Zucchini Sliced
  • 1 medium Red bell pepper Sliced
  • 1 medium Red onion Sliced
  • 1 cup Cherry tomatoes Halved
  • 3 cloves Garlic Minced
For the Extras
  • 1/2 cup Kalamata olives Pitted
  • 1/4 cup Sun-dried tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 1 medium Lemon Juiced
  • 1/2 cup Feta cheese Crumble on top
  • 1/4 cup Fresh parsley Chopped, optional

Method
 

Step-by-Step Instructions
  1. Prepare your ingredients by chopping chicken breasts into bite-sized chunks, slicing zucchini, red bell peppers, and red onion, and halving cherry tomatoes. Mince garlic finely.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, add to the pan, and sear for about 6-8 minutes until cooked through. Set aside.
  3. In the same skillet, add remaining oil and reduce heat to medium. Sauté red onion and minced garlic for 2 minutes until fragrant.
  4. Add sliced zucchini, red bell peppers, and cherry tomatoes. Stir-fry for 4-5 minutes until vegetables are just tender.
  5. Return chicken to the skillet. Mix in sun-dried tomatoes, dried herbs, lemon juice, and olives. Adjust salt and pepper to taste.
  6. Sprinkle feta cheese over the top before serving. Garnish with fresh parsley if desired.
