Ingredients
  

For the Steak
  • 1 lb Sirloin Steak Flank or skirt steak can also be used
  • 1/4 cup Olive Oil Extra virgin for best taste
  • 2 cloves Garlic Minced
  • 1 tbsp Lemon Juice Fresh juice preferred
  • 1 tsp Dried Oregano Use fresh when possible
  • 1 tsp Dried Thyme Use fresh when possible
  • Salt To taste
  • Black Pepper To taste
For the Bowl
  • 2 cups Cooked Grains Such as brown rice or quinoa
  • 1 cup Roasted Chickpeas Optional
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Diced
  • 1/2 cup Red Onion Sliced
  • 1/2 cup Kalamata Olives Pitted
  • 1/2 cup Feta Cheese Omit for dairy-free
  • 1/4 cup Fresh Herbs (Parsley or Dill) Chopped
For the Tzatziki
  • 1 cup Greek Yogurt Coconut yogurt for dairy-free option
  • 1/2 cup Cucumber Grated, excess moisture squeezed out
  • 1/2 tbsp Honey Optional

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, oregano, and thyme. Season with salt and black pepper. Pour over the sirloin steak and marinate for 30 minutes.
  2. While the steak marinates, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, and fresh dill. Stir until smooth, season, and chill.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, oregano, and season with salt and pepper for the vinaigrette. Set aside.
  4. Heat a skillet or grill pan over medium-high heat. Sear the marinated steak for 4-5 minutes on each side until browned. Let rest before slicing.
  5. Assemble the bowl starting with cooked grains, add sliced steak, and top with cherry tomatoes, cucumber, red onion, olives, and chickpeas. Drizzle with tzatziki and vinaigrette.
