  4. Cut the loaf of sourdough into a diamond pattern, ensuring not to cut all the way through.
  5. Spoon the garlic butter mixture into each cut and sprinkle grated mozzarella cheese.
  6. Wrap the loaf tightly in aluminum foil and bake for 15 minutes.
  7. Unwrap the bread, sprinkle more cheese on top, and return to the oven for an additional 5-7 minutes.
