Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine chopped zucchini, cherry tomatoes, and red onion. Drizzle olive oil and sprinkle oregano.
  3. Spread the seasoned vegetables evenly across a baking sheet.
  4. Place your baking sheet in the preheated oven and roast for about 30 minutes.
  5. Once roasted, sprinkle feta cheese over the hot vegetables.
