Step-by-Step Instructions
  1. In a large pot, warm 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add 1 medium diced onion and 1 diced bell pepper to the pot, sautéing for 5-7 minutes until the onion is translucent.
  3. Stir in 2 minced garlic cloves and cook for about 1 minute until fragrant.
  4. Add 1 can of drained butter beans and 1 can of diced tomatoes, then sprinkle in spices. Mix well to combine.
  5. Pour in 1 cup of vegetable broth, stirring to combine. Raise heat to bring to a simmer.
  6. Cover and reduce heat to low, simmer for 10-15 minutes until the mixture thickens.
  7. If using greens, stir in 1 cup of roughly chopped spinach or kale and simmer for an additional 5 minutes.
