  • 3 cups Cooked Rice any type of cooked rice
  • 1 cup Sour Cream Greek yogurt can be an alternative
  • 1 can Cream of Celery Soup substitute with any cream soup
  • 1 can Chopped Green Chiles for more spice, use jalapeños
  • 1 cup Corn Kernels fresh or frozen
  • 2 cups Pepper Jack Cheese shredded; mozzarella or cheddar can be used for a different taste
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat oil over high heat. Add red bell pepper and onion, sauté for 8 minutes until softened.
  3. In a mixing bowl, combine cooked rice, sour cream, cream of celery soup, green chiles, and corn. Fold in sautéed vegetables and 1 cup of Pepper Jack cheese.
  4. Transfer the mixture to the prepared baking dish and bake covered with foil for 30 minutes.
  5. Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 10 minutes.
  6. Let it cool for a few minutes before slicing to serve.
