- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet, heat oil over high heat. Add red bell pepper and onion, sauté for 8 minutes until softened.
- In a mixing bowl, combine cooked rice, sour cream, cream of celery soup, green chiles, and corn. Fold in sautéed vegetables and 1 cup of Pepper Jack cheese.
- Transfer the mixture to the prepared baking dish and bake covered with foil for 30 minutes.
- Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 10 minutes.
