  • 2 tablespoons Vegetable Oil Canola or sesame oil preferred.

  • 1 cup Carrots Chopped small for faster cooking.
  • 1 cup Green Peas Frozen peas, added straight from the freezer.
  • 1 medium Onion Sauté until soft and translucent.
  • 2 cloves Garlic Fresh minced garlic.
For Protein and Flavor
  • 2 large Eggs Scramble before mixing with the rice.
  • 3 tablespoons Soy Sauce Low-sodium preferred.
  • 2 scallions Green Onions Chopped for garnish.

Step-by-Step Instructions
  1. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. If using protein, place it in the air fryer basket and cook for 8–10 minutes.
  3. Combine chopped onions and minced garlic, and sauté in the air fryer for 3–4 minutes.
  4. Add diced carrots and frozen peas; cook for an additional 3–4 minutes.
  5. Add cold cooked rice and soy sauce; mix for 2–3 minutes.
  6. Fold in scrambled eggs and mix for about 2 minutes.
  7. Spread mixture evenly in the air fryer; air fry for 10–15 minutes.
  8. Garnish with chopped green onions and serve hot.
