  • 1 cup corn drained, frozen works
  • 1-2 jalapeños seeded for less heat
  • 1 cup cherry tomatoes quartered
  • ½ cup red onion finely chopped
  • ¼ cup pepitas (pumpkin seeds) sunflower seeds make a good swap
For the Dressing
  • ½ cup mayo or Greek yogurt use dairy-free for a lighter option
  • 1 tablespoon fresh lime juice fresh-squeezed is best
  • 1 teaspoon chili powder adjust based on flavor preference
  • ½ teaspoon garlic powder season to your liking
  • ½ teaspoon cumin season to your liking
  • ½ teaspoon paprika season to your liking
  • salt to taste

Steps
