Step-by-Step Instructions
  1. In a medium saucepot, combine the cherries and water. Bring to a boil, reduce to a simmer, and mash slightly. Simmer for about 15 minutes.
  2. Transfer the cherry mixture to a blender. Add honey, lime zest, and lime juice. Blend until smooth, about 30 seconds.
  3. Refrigerate the cherry syrup for at least 30 minutes to chill and meld flavors.
  4. For a single serving, fill an 8oz glass with ice, add 2oz cherry syrup, and top with club soda. Stir to combine.
  5. For a pitcher, combine the entire batch of syrup with 30oz club soda in a pitcher filled with ice, stir gently to mix.
