For the Salad
  • 16 oz Rotini You can substitute any pasta shape, but rotini is especially fun!
  • 1 Cucumber Peel and slice into half-moons for easy bites.
  • 1 pint Tomatoes Halved for delightful pops of flavor.
  • 1 Bell Pepper Diced into bite-sized pieces.
  • 2/3 cup Olives Kalamata or green olives for a salty depth.
  • 1/2 cup Feta Cheese Crumbled on top, or substitute with goat cheese.
  • 1/3 cup Red Onion Finely minced.
  • 1/4 cup Fresh Parsley Chopped.
For the Dressing
  • 1 cup Greek Dressing Try Ken's Steak House for a zesty touch.
  • 1/4 cup Red Wine Vinegar Adds acidity and depth.
  • 1/3 cup Olive Oil Extra virgin olive oil works best.
  • 3/4 tsp Garlic Powder
  • 1 1/2 tsp Oregano Or Italian seasoning if you're out of oregano.
  • Salt & Pepper Season to taste.

Method
 

Step-by-Step Instructions
  1. Wash and chop your fresh ingredients: peel and slice the cucumber, halve the tomatoes, dice the bell pepper, mince the red onion, and chop the parsley.
  2. In a large pot, bring salted water to a rolling boil. Add the rotini and cook according to package instructions until al dente, about 8–10 minutes. Drain and rinse under cold water.
  3. For the dressing, whisk together red wine vinegar, olive oil, garlic powder, oregano, salt, and pepper in a small bowl.
  4. In a large bowl, combine cooled rotini pasta with vegetables and sprinkle crumbled feta on top. Pour dressing over and gently toss to coat.
  5. Cover and refrigerate for at least 2 hours before serving.
