  • 1 medium Red Bell Pepper
  • 1-2 pieces Scotch Bonnet Peppers Adjust for spice preference
  • 2 tbsp Tomato Paste
  • 1 tsp Garlic Powder Use fresh garlic if preferred
  • 1 tsp Ginger Powder Fresh ginger can be swapped
  • 1 cube Bouillon Cube Can substitute with homemade stock
Optional Garnish
  • 2 tbsp Chopped Parsley or Cilantro For a fresh finish

Method
 

Step-by-Step Instructions
  1. Marinate the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Let sit for 30 minutes.
  2. Heat vegetable oil and sear the chicken until browned, about 5-7 minutes. Remove and set aside.
  3. Blend Roma tomatoes, red bell pepper, onion, and scotch bonnet peppers into a smooth puree.
  4. In the same skillet, cook tomato paste for 2 minutes, then add blended mixture and simmer for 10 minutes.
  5. Mix in garlic powder, ginger powder, and crumbled bouillon cube. Taste and adjust salt as needed.
  6. Return the chicken to the skillet, cover, and simmer on low for 25-30 minutes until tender.
  7. Let the stew sit for a couple of minutes, then garnish with parsley or cilantro before serving.
