Ingredients
  

For the Marinade
  • 1 pound Chicken Thighs or chicken breast for a leaner option
  • 1/4 cup Olive Oil adds moisture and richness
  • 4 cloves Garlic fresh minced for best taste
  • 1 tablespoon Lemon Juice freshly squeezed
  • 2 tablespoons Red Wine Vinegar can substitute with apple cider vinegar
  • 1 tablespoon Dried Oregano fresh oregano can also be used
  • 1 teaspoon Ground Cumin adds warmth and earthiness
  • to taste Salt & Black Pepper essential for seasoning
For the Bowl
  • 2 cups Cooked Rice or cauliflower rice for low-carb option
  • 1 cup Cherry Tomatoes halved or diced
  • 1 cup Cucumber diced
  • 1/2 cup Red Onion thinly sliced or pickled
  • 1/2 cup Kalamata Olives optional
  • 1/2 cup Feta Cheese crumbled or replaced with avocado for vegan option
  • 1/4 cup Fresh Parsley for garnish

Method
 

Prepare the Marinade
  1. In a large mixing bowl, whisk together olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, and salt and pepper to taste.
Marinate the Chicken
  1. Coat chicken thighs in the prepared marinade and refrigerate for at least 30 minutes or up to 4 hours.
Cook the Chicken
  1. Preheat grill or skillet to medium-high heat. Cook chicken thighs for about 5-7 minutes on each side or until cooked through.
Rest and Slice
  1. Transfer chicken to a cutting board and let it rest for 5 minutes before slicing into thin strips.
Assemble Bowls
  1. In serving bowls, layer cooked rice, sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
Garnish & Serve
  1. Drizzle with tzatziki sauce and sprinkle with fresh parsley. Optionally serve with pita bread.
