Ingredients

For the Roast
  • 1 cut Certified Angus Beef Roast Choose a well-marbled cut for maximum tenderness and flavor.
  • 2 tablespoons Olive Oil Helps the herbs stick to the meat; you can substitute vegetable oil if needed.
For the Herb Crust
  • 2 tablespoons Fresh Rosemary Infuses the roast with fragrant herbal notes; thyme can be an excellent alternative.
  • 4 cloves Garlic Fresh provides the best depth of flavor; garlic powder is an acceptable substitute.
  • 1 tablespoon Kosher Salt Essential for enhancing the meat's natural flavors; sea salt works in its place.
  • 1 teaspoon Black Pepper Freshly ground black pepper offers an aromatic kick; adjust to taste.

Equipment

  • roasting pan
  • rack
  • Medium bowl
  • sharp knife

Method

Step-by-Step Instructions for Perfect Roast Beef with Herb Crust
  1. Begin by removing your Certified Angus Beef roast from the fridge and letting it come to room temperature for about 30 minutes.
  2. In a medium bowl, combine freshly minced garlic, finely chopped rosemary, olive oil, kosher salt, and black pepper until it forms a paste.
  3. Once your herb mixture is ready, rub it all over the beef roast, ensuring an even coating on all sides.
  4. Preheat your oven to 450°F (232°C). Place the seasoned roast on a rack in your roasting pan and put it in the oven.
  5. Roast it at this high temperature for 15 minutes, then reduce the temperature to 325°F (163°C). Roast for 1 to 1.5 hours, until a meat thermometer reads 135°F (57°C) for medium-rare.
  6. Once your roast reaches the desired temperature, carefully remove it from the oven. Loosely cover it with aluminum foil and let it rest for 15-20 minutes.
  7. After resting, slice against the grain using a sharp knife. Arrange the slices on a serving platter.
