Ingredients
  

For the Skillet
  • 2 tablespoons avocado oil can swap with olive oil
  • 1 pound Yukon gold potatoes diced
  • 1 pound lean ground beef recommended 90/10%
  • 1 medium yellow onion diced
  • 1 medium red bell pepper diced
  • to taste kosher salt
  • to taste black pepper
  • 1 can diced green chiles
  • 1 tablespoon chili powder adjust according to spice level
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste cilantro optional, for garnish
  • 1.5 cups shredded cheese cheddar, colby jack, or pepper jack

Method
 

Cooking Steps
  1. Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat.
  2. Add 1 pound of diced Yukon gold potatoes and sauté for 5-6 minutes until golden.
  3. Push the potatoes to the side and add 1 pound of lean ground beef, 1 diced yellow onion, and 1 diced red bell pepper. Cook for 5-7 minutes.
  4. Season with kosher salt and black pepper, and sauté for another 2-3 minutes.
  5. Mix in 1 can of diced green chiles, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika. Cook for 6-8 minutes.
  6. Sprinkle 1.5 cups of shredded cheese on top and cover the skillet for 1 minute until melted.
  7. Garnish with chopped cilantro and serve.
