Cooking Steps
- Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat.
- Add 1 pound of diced Yukon gold potatoes and sauté for 5-6 minutes until golden.
- Push the potatoes to the side and add 1 pound of lean ground beef, 1 diced yellow onion, and 1 diced red bell pepper. Cook for 5-7 minutes.
- Season with kosher salt and black pepper, and sauté for another 2-3 minutes.
- Mix in 1 can of diced green chiles, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika. Cook for 6-8 minutes.
- Sprinkle 1.5 cups of shredded cheese on top and cover the skillet for 1 minute until melted.
- Garnish with chopped cilantro and serve.
