Ingredients
  

For the Sandwich
  • 3 lb beef steak or roast, thinly sliced Chuck roast or sirloin work best.
  • 8 pieces hoagie rolls Soft rolls; French bread can be used.
  • 8 slices provolone cheese Gooey and delicious; mozzarella or Swiss are alternatives.
  • butter Optional for toasting rolls.
For the Au Jus
  • 2 cups water Increase to 2.5 cups for stovetop.
  • 2 tsp onion powder Fresh onions can be used.
  • 1 tsp garlic powder Fresh minced garlic is an alternative.
  • 1 packet au jus gravy mix About 1 oz.; can be substituted with homemade stock.
  • 1 packet brown gravy mix About 1 oz.; can be omitted or substituted.
  • salt & pepper Season to taste.

Method
 

Step-by-Step Instructions
  1. In your preferred cooking appliance, combine 3 pounds of thinly sliced beef with onion powder, garlic powder, au jus gravy mix, brown gravy mix, and 2 cups of water.
  2. For the Crockpot, cover and cook on HIGH for 4 hours or LOW for 6-8 hours. For Instant Pot, set to manual for 35 minutes and allow a 10-minute natural release. For stovetop, simmer for 1.5 to 2 hours.
  3. Once cooked, stir gently, taste, and adjust seasoning with salt and pepper.
  4. Preheat the broiler and place hoagie rolls cut-side up on a baking sheet. Optionally butter the inside and broil for 2-3 minutes until lightly browned.
  5. Fill toasted rolls with beef, top with provolone, and return to broiler for 1-2 minutes until cheese is melted.
  6. Serve assembled sandwiches with a side of the au jus for dipping.

Notes
