- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a large skillet, heat olive oil over medium heat. Add the ground beef and cook for 5-7 minutes until browned.
- Add chopped onion and minced garlic, cooking for 3-4 minutes until onions are translucent.
- Transfer the beef mixture to the baking dish and layer thinly sliced potatoes on top, seasoning with salt, pepper, Italian seasoning, and paprika.
- Sprinkle cheddar and Parmesan cheese over the potatoes and pour beef broth around the edges of the dish.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 15-20 minutes until potatoes are fork-tender and cheese is golden.
